Finally! My Metro Deli Inspired Sandwiches



I'm so excited to finally announce and share with you my "Metro Deli" sandwiches, inspired by authentic New York delicatessens where I've had the greatest sandwiches in the world. When I say the greatest, I mean the greatest.

Here's a little background on my newest special...

Between 1880 and 1920, two-million plus Yiddish speaking Jews from Eastern Europe immigrated to New York.  The New York they arrived to was heavily populated by Germans and German culture. Many foods we consider American were originally made, sold and popularized by Germans in their delis. To name a few: "…sausages, beef frankfurters, sauerkraut, hamburgers, meat loaf, liverwurst, many cold cuts, noodle dishes, dill pickles, herring in cream sauce, lager beer, seltzer water, pretzels (including the big, doughy New York-style pretzels), potato salad, muenster cheese, rolls (like the Kaiser), pastries, rye bread, and pumpernickel." As the Jews settled in New York, they opened their own kosher delis all over the city and the New York Jewish Deli was born. "Delicatessen (or Delikatessen) is a German word that combines 'delicious' or 'delicacies' and eating. It means either 'delicacies to eat,' or 'to eat delicious things.' In Yiddish, a mostly Germanic language, it means the same thing.  Yiddish Jews right off the boat knew what the word meant." The early Jewish delis weren't much different from the German ones, except for one thing: their lack of dairy and pork on the menu.  Because of the abundance of beef in America, brisket (a kosher beef cut from the breast and marbled with fat), corned beef, and pastrami became Jewish traditions along with those mile-high sandwiches New Yorkers know and love.

I am I fan of those very sandwiches. I grew up in Nutley, NJ, right outside of NYC. As I grew, so did my appreciation for Jewish delicatessens and the great food they made including matzo ball soup, potato pancakes, corned beef, and of course, hot pastrami.  I've ate at the best of the best: Pastrami King, Second Ave Deli, Carnegie Deli, The Stage, and Katz's, to name a few. There, it's a religion. Here in Philadelphia we have the Famous 4th Street Deli, but other than that there aren't many true New York style Jewish delicatessens. That is why I decided to master my very own "Metro Deli" sandwiches for Zachary's customers, right here in the suburbs.

Football Season in Full Swing

GO GIANTS! GO BLUE! 

Yes, that's right.
My name is Chef Keith Taylor and I am a New York Football Giants fan through and through.
I bleed blue no matter where I reside.

This may not go over too well with area Eagles fans but, please don't hold it against me.
I am originally from Nutley, NJ. Plus, how can you shun the man who brought some soul and  Zachary's BBQ to the Philadelphia suburbs?

...an afternoon engagement with Michelle Obama

Today, I am invited to attend an event with Michelle Obama. As busy as Elizabeth and I are with the restaurant, new employees, renovations, new POS, yada, yada, yada...we both said, "We'll make the time to attend!" We were given the opportunity in part because our business expansion is a direct result of changes and policies put in place by our president, Barack Obama. Changes in SBA lending and rebates as part of the Small Business Jobs Act are part of what our president has done that helped us expand.

I am not star struck and I am certainly no politico, but, I must say this...every president has it tough and so much responsibility to answer for, but, my wife and I, Team Zachary's BBQ Southern Comfort & Catering, and our customers are thankful for changes that put our business in a position to provide several jobs and help us establish a new business in the heart of our local community!

Supermarket Prices will go up sharply...Watch!

Every year I am faced with increases and supply issues that always effect our business. This year is no different for Elizabeth and I, and the team at Zachary's BBQ. The reason and the severity is a little different this year, and from time to time I will share news that I know you can use.

Changes and drought have been so severe that it is really going to impact pricing on just about everything we eat or purchase at the supermarket (except maybe fish and non perishables).

My world gets its food from the same place you do...and that means you should pay attention and at least know why your dollar won't go as far next year and your grocery bag will hold a little less. I am constantly looking at the market, as well as, always looking at things that effect the market, to be prepared for what is coming in business.

Zachary's BBQ on 6ABC

Zachary’s BBQ, located on Markley St. in Norristown, was recently on 6ABC promoting the Norristown’s Bicentennial Cookbook. Chef Taylor suggested a couple recipes for the cookbook including Penne with Gorgonzola Sauce (Mary Ann Calamia), Chicken Walnut Cranberry Salad (Susan G. Stehman), and Crab Casserole (Lil Gambone’s Mom). 6ABC shot a cooking segment with Chef Taylor of Zachary’s.

The cookbook, “Recipes and Remembrances”, was created by the dedicated work of two municipal staff members, Sandy Grubb and Lil Gambone.
